2 Hairy Marrow
200g pork ribs
100g lean pork
6 red dates, stoned
1 slice old ginger
1.5 litre (9 cups) water
SEASONING
1 teaspoon salt
1/2 teaspoon light soy
- Wash and skin the marrows. Cut off and discard the ends. cut each marrow into five sections.
- Wash the pork ribs and lean meat, then scald them in boiling water for 3 mins. Rinse and drain.
- Bring 1.5 litres of water to a boil. Add all the ingredients and keep boiling over high heat for 15 mins.
- lower the heat, cover the pot and simmer the soup for 2 and half hours. Add seasoning before serving.
